White Chicken Chili Recipe

Today you are in for a treat.... I am sharing one of my closest friend's recipe.
My favorite recipe. 
Steph's Winning Chicken Chili

One pound of chicken
2 poblano peppers (roasted)
1 red bell pepper (roasted)
2 medium white onions (diced)
2 tablespoons of cumin
1 cup of salsa verde
2 sorano peppers (diced)
2 carrots (shredded)
1 bag of frozen corn
16 oz of sour cream
32 oz of chicken stock
2 tablespoons of minced garlic
1 handful of cilantro
1 tsp garlic salt
1 tsp salt
3 cans of white navy beans

Sometimes I like to add in
a couple cans of rotello tomatoes
And a jar of Alfredo sauce
So throw whatever you feel like in :)

We like to top ours with sour cream and shredded cheddar cheese

Add one pound of chicken breast to a large pot of chicken stock and bring to a boil. Reduce heat to medium and cook for about an hour or until chicken is falling apart.  Remove chicken from stock and shred.  Save stock for later. 
Saute shredded chicken, onions, sorano peppers, poblano peppers, shredded carrots, and red bell pepper until soft.  Add minced garlic, cilantro, cumin, garlic salt, salt, and cook for an additional minute.  Add all contents to the pot of chicken stock.  Also add salsa verde and frozen corn.  Cook an additional hour, then add sour cream.  Cook one more hour and serve.  


One thing removed from our Fall to do list :)

And it was delicious!
